"Good old raisin and peanut bars. Moist and chewy, they travel well and are great for brown baggers and hikers."
List of Ingredients
â—¦ 1 cup unsalted, unsweetened peanut butter (smooth or crunchy)
â—¦ ½ cup (1 stick) butter, softened
â—¦ 1 cup pure maple syrup
â—¦ 1 egg
â—¦ 1 teaspoon vanilla extract
â—¦ ½ teaspoon baking soda
â—¦ 1 cup old-fashioned rolled oats
â—¦ 1 cup whole-wheat or unbleached all-purpose flour
â—¦ 1 ½ cups finely chopped unsalted raw peanuts
â—¦ 1 ½ cups raisins or dried cranberries
Recipe
Preheat the oven to 350° F. Grease a 9 x 13-inch baking pan.
Cream the peanut butter and butter with an electric mixer. Gradually add the maple syrup, egg, vanilla, and baking soda. Stir in the oats and flour, just to blend, followed by the peanuts and raisins. Using floured hands, pat the mixture evenly into the prepared pan.
Bake for about 30 minutes, just until the edges begin to brown.
Let cool on a wire rack before cutting into bars.
Makes about 24 bars
