    Herbed Potato Chips

    List of Ingredients


    • 3 Tbsp olive oil
    • 4 cloves garlic, finely chopped
    • Two 5½-ounce bags potato chips
    • ¾ cup chopped fresh parsley
    • Grated zest of 1 lemon


    Instructions


    1. Preheat the oven to 350° F.
      In a small saucepan over low heat, warm the olive oil and garlic for 3 minutes. Remove from the heat and let stand 10 minutes.

    2. Pour the potato chips into a large serving bowl. Drizzle the chips with the oil and toss to coat evenly. Transfer the chips to a baking sheet and bake for 7 minutes.

    3. Return the chips to the bowl. Add the parsley and lemon zest, and toss to coat. Serve warm.

      Serves 8
