    Salted Maple Granola

    "Granola is such a negative word. Maybe it's from growing up in the Pacific Northwest, where we described anyone boring AF as 'granola.' But in my old age, I would now take being called granola as a compliment. I love a good 'fridge sh*t' dish—some divine recipe made from whatever it is you've got stuffed in the crannies of your refrigerator. Granola is the ultimate pantry sh*t recipe. Once you've got the base down, check the marijuana laws of your state, do or do not smoke a j and raid your pantry for your favorite flavors and Go. To. Town. I love me some toasty, salty oats, ohhhhhh baby. Or salty, toasty oats with dried sour cherries and coconut flakes ughhhhh or salty, toasty oats paired with a peanut butter pretzel sitch, or toasty, salty oats tossed with shredded mozzarella and diced Slim Jims*. ENDLESS POSSIBILITIES."

    List of Ingredients

    â—¦ 3 cups old-fashioned rolled oats
    â—¦ â…” cup unsweetened finely shredded coconut
    â—¦ ½ cup chopped pecans
    â—¦ ½ cup sliced almonds
    â—¦ ¼ cup sunflower seeds
    â—¦ ½ cup vegetable oil or melted coconut oil
    â—¦ â…“ cup maple syrup
    â—¦ â…“ cup (packed) light brown sugar
    â—¦ 2 teaspoons vanilla extract
    â—¦ 2 ½ teaspoons kosher salt
    â—¦ 1 cup chopped dried cherries (the sourer the better)

    Recipe

    Preheat the oven to 350° F. Line a large, rimmed baking sheet with parchment paper.

    In a large bowl, combine the oats, coconut, pecans, almonds, and sunflower seeds. In a small bowl, whisk together the oil, maple syrup, brown sugar, vanilla, and salt. Add to the oat mixture and toss together.

    Spread the granola on the baking sheet and bake until golden brown, stirring occasionally, 25 to 30 minutes (the edges will get a nice, dark brown color, but if you think the nuts are entering Burnville, pull it). Remove from the oven, cool completely, and stir in the cherries. Granola keeps, stored in an airtight container, for up to 2 weeks.

    Makes 6 cups
