"This is one of those snacks that you have to taste to believe. It's so incredibly simple, but you HAVE to know about it! Almond bark is really just a chocolate-like confection that sets faster than chocolate (think candy coating or candy melts). I use the vanilla flavor in this recipe, but use the chocolate flavor if you prefer. The combination of this vanilla candy coating with the buttery puffcorn is the ultimate salty-sweet snack combo. My Oklahoma friend Marcia first made this treat for me and brought it to a Zumba class we both attended. You may need to do an extra exercise class after eating this salty-sweet goodness, but...it's worth it!"
List of Ingredients
◦ 1 one-pound package vanilla-flavored almond bark or candy coating (like Candiquick)
◦ 2 (3.5-ounce) bags butter puffcorn (I like Chester's)
Recipe
Melt the almond bark in a medium microwave-safe bowl in 30-second increments until completely melted and smooth, 1 to 2 minutes.
Place the puffcorn in a large bowl.
Pour the melted almond bark over the puffcorn and gently mix until the puffcorn is completely coated.
Spread the mixture over a sheet of parchment paper in a single layer and let set, about 10 minutes. Store in an airtight container at room temperature for up to 2 weeks.
Serves 8
❧ If the puffcorn is left uncovered, it will get soggy, so keep a lid on it!
