Sweet & Hot Rum-Roasted Peanuts

- 1 cup rum
- 1/2 cup sugar
- 2 Tbsp peanut oil
- 1 Tbsp Worcestershire sauce
- 1 Tbsp Tabasco sauce
- 1 cup raw shelled peanuts
- 2 tsp cayenne pepper
- 1 Tbsp cumin
- 1 Tbsp ginger
- 2 tsp salt
- 2 tsp black pepper
Instructions
- Preheat oven to 350 degrees (F). Bring the rum to a boil. Add sugar and reduce liquid by half, stirring occasionally, to dissolve sugar.
- In a separate bowl, combine the oil, Worcestershire sauce and Tabasco. Add the rum-and-sugar mixture and the peanuts. Let stand 8 to 10 minutes.
- Lay peanuts in an even layer in a shallow baking pan and place in the oven. Roast, stirring occasionally, until liquid is absorbed (about 45 minutes).
- Place cayenne, cumin, ginger, salt and black pepper in a bowl. Add the roasted peanuts and toss to coat evenly. Let cool. Store in an airtight container.
