    Sweet & Hot Rum-Roasted Peanuts

    List of Ingredients


    • 1 cup rum
    • 1/2 cup sugar
    • 2 Tbsp peanut oil
    • 1 Tbsp Worcestershire sauce
    • 1 Tbsp Tabasco sauce
    • 1 cup raw shelled peanuts
    • 2 tsp cayenne pepper
    • 1 Tbsp cumin
    • 1 Tbsp ginger
    • 2 tsp salt
    • 2 tsp black pepper


    Instructions


    1. Preheat oven to 350 degrees (F). Bring the rum to a boil. Add sugar and reduce liquid by half, stirring occasionally, to dissolve sugar.

    2. In a separate bowl, combine the oil, Worcestershire sauce and Tabasco. Add the rum-and-sugar mixture and the peanuts. Let stand 8 to 10 minutes.

    3. Lay peanuts in an even layer in a shallow baking pan and place in the oven. Roast, stirring occasionally, until liquid is absorbed (about 45 minutes).

    4. Place cayenne, cumin, ginger, salt and black pepper in a bowl. Add the roasted peanuts and toss to coat evenly. Let cool. Store in an airtight container.

      Yield: 1 cup
