â—¦ 2 pound sweet potatoes, peeled, halved, crosswise, and cut into 1-inch-thick wedges
â—¦ 3 tablespoons unsalted butter
â—¦ â…“ cup packed dark brown sugar
â—¦ 1 ½ teaspoons coarse salt
â—¦ ¼ teaspoon freshly ground black pepper
â—¦ ½ cup water
Recipe
Combine the sweet potatoes, butter, brown sugar, salt, pepper, and water in a straight-sided 10-inch skillet with a tight-fitting lid, and bring to a boil over high heat, stirring the potatoes to coat with the liquid.
Lower the heat, cover, and simmer undisturbed until the potatoes are tender but not mushy, 12 to 15 minutes.
Uncover and continue cooking, stirring gently a few times, until most of the liquid has evaporated and the potatoes are caramelized, about 5 minutes more.
