Down Home Collard Greens

List of Ingredients
- 1 lb. fresh collard greens
- 4 smoked ham hocks
- Crushed red pepper
- Salt, pepper and hot sauce to taste
- Garnish: Sliced red onion
Instructions
- Cut and thoroughly wash the greens.
- Place the greens in a large stockpot with ham hocks, crushed red pepper and enough water to cover. Simmer over a medium flame for about 2 hours (until greens are tender).
- Remove from flame and add salt, pepper and hot sauce to taste. Serve with sliced red onion for garnish.
Makes 4 to 6 servings.
