    Hot-Water Cornbread

    List of Ingredients


    • 2 cups white cornmeal
    • 1/4 tsp baking powder
    • 1-1/4 tsp salt
    • 1 tsp sugar
    • 1/4 cup half-and-half
    • 1 Tbsp vegetable oil
    • 3/4 cup to 1-1/4 cups boiling water *
    • Vegetable oil
    • *
    • Softened butter, for serving


    Instructions


    1. Combine first 4 ingredients in a bowl; stir in half-and-half and 1 tablespoon oil. Gradually add the boiling water; stir until batter is the consistency of grits.

    2. Pour oil to a depth of 1/2-inch into a large heavy skillet; place over medium-high heat.

    3. Scoop batter into a 1/4-cup measure; drop into hot oil and fry, in batches, 3 minutes on each side or until golden. Drain well on paper towels. Serve immediately with butter.

      Makes 8 cakes.



    Final Comments


    * The amount of boiling water you need varies depending on the type of cornmeal you use. Stone-ground cornmeal requires more liquid.
