    Just Like Mama's Down Home Cookin'

    Wash and scrub a 10-lb. bucket of chit'lins at least 5 times -- no joke -- in a sink. After each scrubbing, change the water. Remove excess fat and drain. Place them in a large pot with 2 bay leaves, garlic, salt and pepper, 1/3 cup cider vinegar, and red pepper flakes. Placed sliced onion on top to cut the smell. Bring to a boil, then reduce heat to medium-low. Cook slowly for 2 to 3 hours until fork-tender. Stir occasionally. Drain occasionally as water builds up, but add just a bit more of vinegar each time. Remove from heat once tender.

    Cut up and top with Durkee's Louisiana Hot Sauce.
