    Oxtails and Gravy

    List of Ingredients


    • 3 lbs. oxtails
    • 1/2 onion, chopped
    • 1/2 green bell pepper, chopped
    • 1 rib celery, chopped
    • 1/2 tsp dried basil
    • 1/2 tsp black pepper
    • 1/2 tsp garlic salt
    • 3 Tbsp butter or oil
    • 1/4 cup flour
    • Salt to taste
    • Pepper to taste


    Instructions


    1. Place the oxtails in a large pot and cover with lots of water. Bring to a boil, skim, and add the onion, green pepper, celery, basil, pepper and garlic salt. Simmer 1-1/2 hours.

    2. Remove 3 cups of the cooking broth. Strain and skim the fat from the top. In a large heavy skillet, heat the butter or oil over medium heat. Stir in the flour and cook, stirring constantly, until browned. Stir in the broth and simmer a few minutes.

    3. Remove the oxtails from the pan with a slotted spoon and put into the gravy. Simmer 5 minutes. Season with salt and pepper and serve with rice.

      Makes 4 servings.
