    Soul Food Style Lima Beans

    Recipe Introduction

    "All beans are not created equal, because nothing comforts quite like a lima bean. Something about the way the bean breaks down as it cooks makes them end up as creamy as Grandma's grits. And because of the bacon I cook them with, all that creaminess is infused with pure smoky flavor. I like to serve mine over rice."

    List of Ingredients

    ◦  1 (16-ounce) bag of large dry lima beans, sorted and rinsed
    ◦  ½ pound thick-cut bacon
    ◦  ½ medium yellow onion, diced
    ◦  1 tablespoon minced garlic
    ◦  6 cups chicken broth
    ◦  2 teaspoons granulated sugar
    ◦  2 teaspoons kosher salt
    ◦  ½ teaspoon ground black pepper
    ◦  Chopped fresh parsley, for garnish

    Recipe

    In a large stockpot over high heat, add the beans and about 6 cups water. Once the water starts to boil, turn off the heat and let the lima beans sit for 30 minutes. Then drain the water out of the pot and set the beans to the side.

    In a large skillet over medium-high heat, cook the bacon until it's nice and crisp. Remove the bacon from the skillet but keep the bacon drippings in the pan. Add the onion and cook until tender. Add the garlic and cook for 2 more minutes, then turn off the heat.

    Put the pot with the lima beans over medium heat, and pour in the chicken broth. Add the onion and garlic to the pot, and stir. Crumble in the bacon, then sprinkle in the sugar, salt, and pepper. Stir the ingredients and cover the pot with a lid. Simmer over medium-high heat for 35 to 45 minutes, or until the beans are nice and creamy. Garnish with parsley and serve alone or over rice.


    Makes 6 servings
