    Sweet Buttermilk Cornbread

    List of Ingredients


    • 1 cup cornmeal
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1 Tbsp baking powder
    • 1/4 tsp salt
    • 1 tsp baking soda
    • 1 large egg
    • 4 Tbsp melted butter
    • 1/2 cup buttermilk
    • 1 cup 7-Up (lemon-lime soda)


    Instructions


    1. Combine dry ingredients in a medium mixing bowl.

    2. Add liquid ingredients (reserve a couple teaspoons of the melted butter to brush on top of the finished bread) one at a time, and mix with a wire whisk until thoroughly combined.

    3. Grease a medium cast iron skillet generously with butter or shortening and pour in batter. Bake in a 350-degree oven until top is golden brown and toothpick inserted in center comes out clean.

      Use remaining melted butter to brush generously over top of finished cornbread. Serve warm and store cooled leftovers in airtight container.

      Makes 6 servings.
