Vanessa Williams' Macaroni n' Cheese

- 2 Tbsp butter
- 2 Tbsp flour
- 1 tsp salt
- 1 tsp dry mustard
- 2-1/2 cups milk
- 2 cups shredded cheese (mild or sharp)
- 1/2 cup Gouda cheese
- 8 ounces elbow macaroni
- 1/4 cup buttered bread crumbs
- 1/2 tsp paprika
Instructions
- In saucepan, melt butter and remove from heat. Blend in flour, salt and mustard. Add milk and heat, stirring constantly, until sauce thickens a little and is smooth. Add 1-1/2 cups cheese and heat until melted, stirring occasionally.
- Meanwhile, cook macaroni as directed. Drain and combine with sauce in a 2-quart casserole dish. Top with remaining cheese, bread crumbs and paprika.
Bake at 375 degrees (F) about 20 minutes, or until nicely browned and bubbly.
