    Baked Fish Chowder

    From "The Old Farmer's Almanac Readers' Best Recipes"

    List of Ingredients

    • 1 pound haddock or cod, cut into bite-sized pieces
    • 1 pound scallops
    • 3 cups diced, peeled potatoes or 8 small unpeeled red potatoes, diced
    • 1 onion, diced
    • cup white wine
    • cup ( stick) butter
    • cup all-purpose flour
    • 2 cups light cream or milk
    • Salt, to taste
    • Freshly ground black pepper, to taste
    • Garlic powder, to taste


    1. Preheat oven to 350 F.

    2. Combine fish, scallops, potatoes, onions, wine, and 2 cups water in a 13 x 9-inch baking dish. Cover with aluminum foil and bake for 30 minutes.

    3. Melt butter in a saucepan. Stir in flour to make a roux. Add cream and stir until thickened. Add to baking dish. Add salt, pepper, and garlic powder. Cover and bake for 30 minutes more. Stir well before serving.

      Makes 4 to 6 servings
