    Beer-Cheese Soup

    From "The Coastal Living Cookbook"

    List of Ingredients


    • ¼ cup butter or margarine
    • ¼ cup all-purpose flour
    • 2 cups half-and-half
    • 1 (12-ounce) can beer
    • 1 (16-ounce) loaf pasteurized prepared cheese product, cubed
    • 1 Tbsp Worcestershire sauce
    • ¼ tsp ground red pepper
    • ¼ tsp hot sauce
    • 1/8 tsp salt
    • Ground red pepper


    Instructions


    1. Melt butter in a Dutch oven or large saucepan over medium-low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.

    2. Gradually add half-and-half and beer; cook over medium heat, stirring constantly with a wire whisk, until thickened.

    3. Add cheese; cook over medium heat until cheese melts. Stir in Worcestershire sauce, ¼ teaspoon red pepper, hot sauce, and salt. Ladle into bowls. Sprinkle with additional red pepper before serving.

      Yield: 5 cups
