    Broccoli Cheddar Chowder

    List of Ingredients


    • 1/4 cup butter (1/2 stick)
    • 1 large onion, chopped
    • 2 (1-lb.) pkgs. frozen chopped broccoli
    • 8 cups chicken stock or chicken broth
    • 1/2 tsp thyme, crumbled
    • 1/3 cup flour
    • 3/4 cup cold milk
    • 2 cups shredded Cheddar cheese
    • Salt and pepper to taste


    Instructions


    1. In medium saucepan, saute chopped onion in butter until tender. Add broccoli, chicken stock, and thyme. Simmer until broccoli is tender, about 20 minutes.

    2. Whisk flour and cold milk together. Add to saucepan to thicken soup. Simmer 5 minutes and reduce heat to low.

    3. Add cheese. Stir constantly until cheese is melted. (Do not allow to boil, as cheese will separate.) Salt and pepper to taste.

      Ladle into bowls and serve.
