Broccoli Cheddar Chowder

List of Ingredients
- 1/4 cup butter (1/2 stick)
- 1 large onion, chopped
- 2 (1-lb.) pkgs. frozen chopped broccoli
- 8 cups chicken stock or chicken broth
- 1/2 tsp thyme, crumbled
- 1/3 cup flour
- 3/4 cup cold milk
- 2 cups shredded Cheddar cheese
- Salt and pepper to taste
Instructions
- In medium saucepan, saute chopped onion in butter until tender. Add broccoli, chicken stock, and thyme. Simmer until broccoli is tender, about 20 minutes.
- Whisk flour and cold milk together. Add to saucepan to thicken soup. Simmer 5 minutes and reduce heat to low.
- Add cheese. Stir constantly until cheese is melted. (Do not allow to boil, as cheese will separate.) Salt and pepper to taste.
Ladle into bowls and serve.
