    Caramelized Onion Soup

    List of Ingredients


    • 1/4 cup unsalted butter (1/2 stick)
    • 1-3/4 lbs. white onions, coarsely chopped
    • 1 lb. red onions, coarsely chopped
    • 1 lb. leeks, coarsely chopped (white and pale green parts only)
    • 3 large shallots, coarsely chopped
    • 4 cloves garlic
    • 2 cups Madeira wine
    • 8 cups chicken stock or canned broth
    • 1/2 tsp dried sage
    • 1 large bay leaf
    • Pinch of dried thyme
    • 1 Tbsp Parmesan cheese, per serving
    • Finely chopped fresh parsley (pinch per serving)


    Instructions


    1. Melt butter in medium stockpot over medium-high heat. Saute onions and leeks until nicely browned (caramelized). Add shallots and garlic; saute 2 minutes.

    2. Add remaining ingredients (except Parmesan and parsley). Simmer 20 minutes.

      Ladle into bowls and garnish with Parmesan and parsley.
