    Cauliflower and Cheddar Soup

    List of Ingredients

    â—¦ 1 medium head cauliflower, broken in florets
    â—¦ 1 medium onion, chopped
    â—¦ 2 cups chicken broth
    â—¦ 2 tablespoons butter
    â—¦ 2 tablespoons all-purpose flour
    â—¦ 3 cups milk
    â—¦ 2 cups (8 ounces) shredded Cheddar cheese
    â—¦ 1 tablespoon dried parsley flakes
    â—¦ 1 teaspoon salt
    â—¦ ¼ teaspoon ground nutmeg
    â—¦ â…› teaspoon pepper

    Recipe

    In a large saucepan, combine the cauliflower, onion, and chicken broth. Cover and cook over medium heat until the vegetables are tender.

    Meanwhile, in a medium saucepan, melt butter; stir in flour until smooth. Gradually add milk. Cook and stir until bubbly. Cook, stirring, for two to three minutes longer, or until thickened.

    Reduce heat; add cheese and seasonings. Pour into cauliflower mixture. Simmer slowly for 30 minutes; do not boil.

    Serves 6 to 8
