    Chicken, Asparagus, and Corn Chowder

    Recipe Introduction

    "Chicken, asparagus and corn combine for a light, comforting soup that's easy to whip up with common ingredients. If I have rotisserie chicken on hand, I toss that in."

    List of Ingredients

    â—¦ 2 tablespoons olive oil
    â—¦ ¾ cup cut fresh asparagus (1-inch pieces)
    â—¦ 1 small onion, finely chopped
    â—¦ 2 tablespoons all-purpose flour
    â—¦ ½ teaspoon salt
    â—¦ ¼ teaspoon garlic powder
    â—¦ â…› to ¼ teaspoon pepper
    â—¦ 1 can (14 ½ ounces) chicken broth
    â—¦ ½ cup fat-free half-and-half
    â—¦ 1 ½ cups cubed cooked chicken breast
    â—¦ ¾ cup frozen corn

    Recipe

    In a large saucepan, heat oil over medium heat.
    Add asparagus and onion; cook and stir until tender, 3 to 4 minutes.

    Stir in flour, salt, garlic powder and pepper until blended; gradually stir in the chicken broth and half-and-half. Bring mixture to a boil, stirring constantly; cook and stir until slightly thickened, 3 to 5 minutes. Add chicken and corn; heat through.

    Makes 4 servings
