    Chicken & Vegetable Chowder

    List of Ingredients


    • 1 (10-oz.) pkg. frozen chopped broccoli
    • 3 medium stalks celery, thinly sliced
    • 1 medium onion, chopped
    • 2 cups water
    • 1 tsp salt
    • 1 (10-3/4 oz.) can condensed chicken broth
    • 1 cup cold milk
    • 1/2 cup all-purpose flour
    • 1-1/2 cups cubed, cooked chicken
    • 1 cup milk
    • 6 ounces Swiss cheese, cut into cubes (1-1/2 cups)


    Instructions


    1. Rinse broccoli under cold running water to separate; drain.

    2. Heat broccoli, celery, onion, water, salt, and broth to boiling in Dutch oven or stockpot; reduce heat. Cover and simmer for 10 minutes.

    3. Shake 1 cup cold milk and the flour in a tightly covered container; gradually stir into hot mixture. Heat to boiling. Boil and stir for one minute. Stir in the chicken and the one cup milk. Heat over low heat, stirring occasionally, just until hot -- about 10 minutes.

    4. Stir in cheese; let stand just until cheese is melted, 3 to 5 minutes; stir. Serve hot.

      Makes 8 servings.
