    Easy Seafood Soup

    List of Ingredients


    • 2 Tbsp olive oil
    • 1 medium onion, quartered and sliced
    • 4 cloves garlic, minced
    • 1/4 tsp crushed red pepper
    • 3 cups water
    • 1 (28-ounce) can crushed tomatoes
    • 1/2 cup dry white wine
    • 1 tsp dried thyme
    • Salt to taste
    • 1 cup diced potatoes
    • 1/2 cup sliced carrots
    • 1/2 pound cod fillet, cut into bite-size pieces
    • 1/2 pound shrimp
    • 1/2 pound bay scallops
    • 2 Tbsp chopped parsley


    Instructions


    1. Heat the oil over medium heat in large saucepan or Dutch oven until hot. Add the onion, garlic and crushed red pepper. Cook and stir until the onion is tender.

    2. Add water, tomatoes, wine, thyme, salt, potatoes and carrots. Bring the mixture to a boil over medium-high heat. Reduce the heat to low. Cover and simmer for 10 to 15 minutes.

    3. Add cod, shrimp, and bay scallops. Cover and simmer for 2 to 4 minutes or until seafood is done. Garnish with parsley.

      Makes 6 servings.
