- 2 cups water
- 1 (14-1/2 oz.) can Cajun-recipe stewed tomatoes
- 1 (17-oz.) can mixed vegetables, drained
- 1 cup thinly sliced celery
- 1/2 tsp instant chicken bouillon granules
- 1 clove garlic, minced
- Several dashes bottled hot pepper sauce
- Salt and pepper, to taste
- 8 ounces fresh or frozen cod, haddock, or pike fillets -- cut into 1-inch pieces
Instructions
- Combine water, undrained tomatoes, mixed vegetables, celery, bouillon granules, garlic, and hot pepper sauce in a large saucepan. Bring to boiling; reduce heat. Cover and simmer for 10 minutes or until vegetables are tender.
- Stir in fish. Return just to boiling; reduce heat. Cover and simmer gently for about 5 minutes or until fish flakes easily with a fork; season to taste with salt and pepper if desired.
Makes 4 servings.
