    List of Ingredients


    • 8 ounces beef flank steak, trimmed of fat, cut into 2-inch pieces
    • 1 tsp granulated sugar
    • 1 tsp sesame seeds
    • 1 Tbsp sesame oil
    • 1 Tbsp oyster sauce
    • 4 cups chicken stock
    • 2 cups water
    • 2 Tbsp fish sauce
    • 1/2 cup julienne of shiitake mushroom caps
    • 1/2 cup julienne of carrot
    • 1/2 cup snow peas
    • 2 Tbsp soybean sauce*
    • 1/2 tsp freshly ground black pepper
    • 2 tsp beef-stock paste
    • 1 cup fresh udon noodles
    • 2 tsp garlic, thinly sliced and fried**
    • 2 Tbsp thinly sliced green onion
    • 2 Tbsp chopped fresh cilantro leaves


    Instructions


    1. Place flank steak pieces into a medium-size bowl. Add sugar, sesame seeds, sesame oil and oyster sauce. Mix well and marinate in the refrigerator for 10 minutes.

    2. Heat a grill to medium-high heat and grill beef until it is cooked medium, about 2 minutes on each side. Heat a wok over high heat. Add chicken stock, water, fish sauce, shiitake mushrooms, carrots, snow peas, soybean sauce, black pepper and beef-stock paste. Bring to a boil.

    3. Place noodles in a saucepan of boiling water and cook for 6 minutes. Drain noodles and divide between 2 bowls. Place cooked beef on top of noodles and ladle soup over top. Garnish with fried garlic, green onion and cilantro.

      Makes 2 servings.

      * Soybean sauce is different from soy sauce. Look for it at stores with a large supply of Asian foods.

      ** To fry garlic: Heat a small pan with 1/2 teaspoon canola oil over medium-high heat and add the garlic. Stir-fry about 3 minutes or until golden brown. Immediately remove from heat and spoon into another container to cool.
