Meg's Clam Chowder

List of Ingredients
- 4 to 5 slices bacon (thick-sliced)
- 1 to 2 (6-1/2 oz.) cans chopped clams
- 1/2 cup onion, chopped
- 2-plus cups potatoes, unpeeled
- 1-plus medium carrot, sliced
- 2-1/2 Tbsp flour
- 1-1/2 cups milk
- 1 cup half-and-half
- 1/2 Tbsp salt
- 1/8 tsp pepper
- 1/4 tsp dried thyme
Instructions
- Brown bacon; set aside. Brown the onion in bacon drippings.
- Drain clam liquid into onions. Add potatoes and carrots and cook until soft, about 10 minutes.
- Blend the milk with the flour in a small bowl. Blend milk-flour mixture into vegetables. Add cream, clams, seasonings, and the chopped bacon. Simmer on low for 15 to 30 minutes to thicken.
Ample for one person; double if necessary.
