    Meg's Clam Chowder

    List of Ingredients


    • 4 to 5 slices bacon (thick-sliced)
    • 1 to 2 (6-1/2 oz.) cans chopped clams
    • 1/2 cup onion, chopped
    • 2-plus cups potatoes, unpeeled
    • 1-plus medium carrot, sliced
    • 2-1/2 Tbsp flour
    • 1-1/2 cups milk
    • 1 cup half-and-half
    • 1/2 Tbsp salt
    • 1/8 tsp pepper
    • 1/4 tsp dried thyme


    Instructions


    1. Brown bacon; set aside. Brown the onion in bacon drippings.

    2. Drain clam liquid into onions. Add potatoes and carrots and cook until soft, about 10 minutes.

    3. Blend the milk with the flour in a small bowl. Blend milk-flour mixture into vegetables. Add cream, clams, seasonings, and the chopped bacon. Simmer on low for 15 to 30 minutes to thicken.

      Ample for one person; double if necessary.
