    Shrimp Fiesta Soup

    List of Ingredients


    • 2 Tbsp vegetable oil
    • 1 cup chopped onions
    • 1 tsp minced garlic
    • 1 can (28-oz.) whole tomatoes, with juice, chopped
    • 1 can (8-oz.) tomato sauce
    • 4 cups chicken broth
    • 1 can (4-oz.) chopped green chiles
    • 1 cup diced butternut squash
    • 1 tsp cumin
    • 1/4 tsp hot pepper sauce
    • 2 corn tortillas, cut into thin strips
    • 1 ripe avocado, chopped
    • 1 lb. shrimp, peeled and deveined
    • Shredded Cheddar, tortilla chips, and cilantro leaves


    Instructions


    1. Heat oil in large saucepan over medium heat. Add onions and cook, 5 minutes. Stir in garlic and cook 30 seconds. Stir in tomatoes, tomato sauce, broth, chiles, squash, cumin, and hot pepper sauce. Bring to a boil; reduce heat and simmer 15 minutes until squash is just tender.

    2. Add tortilla strips, avocado, and shrimp to soup; cook until shrimp are opaque throughout, 3 minutes.

      Garnish with cheese, chips, and cilantro.

      Makes 10 cups.
