Recipe Introduction
"Sloppy joe sandwiches were a weeknight favorite when I was growing up. While they're easy to make, they're not so easy to eat, because, well, they're sloppy and kind of soupy. So, I thought, why not turn a soupy sandwich into a satisfying soup? Using canned sloppy joe sauce, this soup is ready to ladle into bowls in less than forty-five minutes. FYI, this is a brothy soup rather than a thick chili, so it deserves some hearty bread or tender biscuits on the side."

â—¦ 1 pound lean ground beef
â—¦ 2 cups frozen chopped peppers and onions
â—¦ 1 1.31-ounce packet sloppy joe seasoning mix
â—¦ 1 32-ounce box low-sodium beef broth
â—¦ 1 15.5-ounce can kidney beans, drained and rinsed
â—¦ 1 15-ounce can sloppy joe sauce
â—¦ 1 14.5-ounce can petite diced tomatoes with juices
â—¦ 1 teaspoon freshly ground black pepper
â—¦ ½ teaspoon kosher salt
â—¦ 3 tablespoons chopped fresh flat-leaf parsley leaves
Recipe
In a large pot over medium-high heat, combine the beef, peppers and onions, and seasoning mix. Cook, stirring to break the beef into smaller pieces, until the meat is cooked through and no longer pink, 5 to 6 minutes.
Stir in the broth, beans, sloppy joe sauce, tomatoes with their juices, pepper, and salt. Bring to a boil, reduce the heat to medium-low, and simmer for 20 minutes.
Stir in the parsley.
To serve, ladle into soup bowls.
