    List of Ingredients


    • 1 Tbsp cooking oil
    • 1/2 cup diced red onion
    • 2 cloves garlic
    • 2 cups diced zucchini
    • 2 cups diced crookneck squash
    • 2 carrots, diced
    • 1 (1-lb.) can spicy black beans
    • 1 whole chicken breast, diced
    • 3 tsp chili powder, or to taste
    • 1/2 tsp ground cumin
    • 1-1/2 cups chicken broth
    • *
    • Corn chips
    • Optional: Salsa, sour cream, fresh cilantro


    Instructions


    1. Heat the oil in a skillet and saute the onion, garlic, zucchini, squash and carrots until soft.

    2. Dump this mess into a pot and add the black beans, raw chicken, chili powder, cumin and chicken broth. Bring to a boil; reduce heat and simmer 45 minutes.

    3. Dish up into bowls and scatter corn chips over the top of each. If you want to add salsa, a spoonful of sour cream, and diced fresh cilantro atop each bowl, that won't necessarily make you a bad person.

      Serves 4
