Split Pea Soup

Recipe Introduction
"When the temperatures dip into the teens and my house looks like an igloo, I want soup! During a rare snowbound weekend I made a pot of my healthy pea soup. My house smelled warm and inviting as the soup simmered on the stove. Too bad you needed an icepick to get to my front door. To minimize the fat content without losing the smoky flavor, I used a smoked turkey wing instead of a ham hock. You won't be able to tell the difference."
List of Ingredients
â—¦ 1 smoked turkey wing or drumstick
â—¦ 1 pound dried split peas, rinsed and drained
â—¦ 1 onion, finely chopped
â—¦ 4 to 5 carrots, peeled, sliced in half lengthwise, and chopped
â—¦ 5 celery stalks with leaves, chopped
â—¦ 2 to 3 cloves garlic, minced
â—¦ ¼ cup chopped fresh Italian flat-leaf parsley
â—¦ 2 teaspoons dried thyme
â—¦ 1 teaspoon sea salt
â—¦ 1 teaspoon black pepper
â—¦ 10 cups water
â—¦ 2 bay leaves
Recipe
Throw everything into the large pot. Yes, it really is that easy! Bring to a boil. Reduce the heat, cover loosely, and simmer for one hour.
Remove the turkey and set aside until cool enough to handle.
Remove the skin and cut up the meat. Discard the bones and the skin. Return the meat to the pot. Remove the bay leaves and discard.
Ladle a big ol' helping into a bowl. Eat. Lick the bowl.
Makes 6 to 8 servings
