    Stilton Cheese & Onion Soup

    List of Ingredients


    • 1/4 lb. butter
    • 1 cup flour
    • 2 onions, julienned
    • 3 cups chicken stock
    • 1 pint heavy cream
    • 2 cups Stilton cheese, crumbled
    • Salt and pepper to taste


    Instructions


    1. Melt butter over medium heat; add onions and cook for 10 minutes until onions turn clear. Add the flour and cook for 10 minutes. Slowly add chicken stock; stir frequently.

    2. When warm and smooth, add cream. Let soup heat and sprinkle in cheese; stir until melted.

      Season with salt and pepper to taste.

      Serves 8
