Stilton Cheese & Onion Soup

List of Ingredients
- 1/4 lb. butter
- 1 cup flour
- 2 onions, julienned
- 3 cups chicken stock
- 1 pint heavy cream
- 2 cups Stilton cheese, crumbled
- Salt and pepper to taste
Instructions
- Melt butter over medium heat; add onions and cook for 10 minutes until onions turn clear. Add the flour and cook for 10 minutes. Slowly add chicken stock; stir frequently.
- When warm and smooth, add cream. Let soup heat and sprinkle in cheese; stir until melted.
Season with salt and pepper to taste.
