List of Ingredients
- 3 to 4 onions, diced
- 27 ounces canned diced green chiles
- 1 to 2 jalapeno peppers, finely chopped
- 2 Tbsp oil
- 3 to 4 Tbsp ground cumin
- 12 to 13 cups pureed tomatoes
- 8 cups chicken stock
- Tortilla chips
- Grated Cheddar cheese
Instructions
- In a large soup pot or kettle, saute onion, chiles and jalapenos in oil; add cumin and saute 5 minutes longer.
- Stir in pureed tomatoes and chicken stock; bring to boil, reduce heat and simmer 30 minutes.
- Meanwhile, place some tortilla chips in bottom of soup bowls. When soup is ready, ladle over tortilla chips and top with grated cheese.
