    Therapeutic Chicken Soup

    List of Ingredients


    • 3 chicken breasts (bone in), skin removed
    • 8 stalks celery, chopped
    • 2 medium onions, chopped
    • 1 red bell pepper, chopped
    • 1/2 green bell pepper, chopped
    • 4 to 5 cloves garlic, minced (plus 2 Tbsp minced garlic from a jar)
    • 4 Tbsp chopped fresh parsley
    • 2 to 3 Tbsp chopped fresh thyme
    • 3 leeks, chopped (use the white part)
    • 4 to 5 carrots, peeled and sliced
    • 3 potatoes, peeled and cut into chunks
    • 6 to 8 cans chicken broth (or equivalent amount of homemade stock)
    • 3 Tbsp paprika
    • Juice of 1 lemon
    • 1 Tbsp sugar
    • Salt, freshly ground pepper, and Tabasco sauce to taste


    Instructions


    1. Combine all ingredients; simmer for 2 hours, uncovered, over medium-low heat. During the last hour of cooking, reduce heat and simmer, covered.

      Variation: If desired, boil 1/4 to 1/2 box of fettucine or other pasta in a separate pan, according to package directions. Drain pasta; add to soup just before serving.

      Makes 10 to 12 servings.
