Tomato-Basil Soup

List of Ingredients
- 1 small onion, chopped
- 2 or 3 cloves garlic, chopped
- 1 Tbsp olive oil
- 1 lb. (about 3 medium) tomatoes, chopped
- 1/2 cup tomato sauce
- 3/4 cup chicken broth
- 1/4 cup cream
- 2 Tbsp coarsely chopped basil
- 1 slice well-toasted country bread
- 2 Tbsp grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Saute the onion and garlic in olive oil in a skillet until tender. Add the tomatoes. Cook over medium heat for 10 minutes.
- Add the tomato sauce, broth, cream, and half of the basil. Simmer for 30 minutes.
- Process in a blender until smooth. Return to the pan. Add the bread, remaining basil, and Parmesan cheese. Season with salt and pepper; garnish with additional cheese and oil.
Makes 2 to 3 servings.
