    Tomato-Basil Soup

    List of Ingredients


    • 1 small onion, chopped
    • 2 or 3 cloves garlic, chopped
    • 1 Tbsp olive oil
    • 1 lb. (about 3 medium) tomatoes, chopped
    • 1/2 cup tomato sauce
    • 3/4 cup chicken broth
    • 1/4 cup cream
    • 2 Tbsp coarsely chopped basil
    • 1 slice well-toasted country bread
    • 2 Tbsp grated Parmesan cheese
    • Salt and pepper to taste


    Instructions


    1. Saute the onion and garlic in olive oil in a skillet until tender. Add the tomatoes. Cook over medium heat for 10 minutes.

    2. Add the tomato sauce, broth, cream, and half of the basil. Simmer for 30 minutes.

    3. Process in a blender until smooth. Return to the pan. Add the bread, remaining basil, and Parmesan cheese. Season with salt and pepper; garnish with additional cheese and oil.

      Makes 2 to 3 servings.
