    Almost Famous Fried Chicken

    List of Ingredients


    • 3 cups buttermilk
    • 3 Tbsp salt
    • 2 Tbsp sugar
    • 1 Tbsp black pepper
    • 2 tsp garlic powder
    • 1-1/2 tsp hot sauce
    • 2 to 3 pounds bone-inch chicken pieces
    • Peanut or vegetable oil for frying
    • 2 cups all-purpose flour


    Instructions


    1. In a large glass or plastic bowl, combine the buttermilk, salt, sugar, pepper, garlic powder, and hot sauce. Add the chicken to the buttermilk marinade, cover, and refrigerate for 12 to 24 hours.

    2. When ready to fry, heat about 1 inch of oil in the bottom of a deep Dutch oven over medium-high heat. Place the flour in a large shallow dish or pie plate. Drain the marinade from the chicken, and dredge the chicken in the flour, then shake off the excess.

    3. Once the oil has reached 350°F, fry the chicken in batches for 10 to 12 minutes on each side, or until the chicken is golden brown and cooked through. You may need to adjust the heat so that the oil stays around 325°; a deep-fry thermometer is very handy for this. Drain on paper towels.

      Serves 6 to 8
