    Bacon Biscuits

    Source of Recipe

From "My Southern Food" by Devon O'Day

    List of Ingredients

    • 1/4 cup shortening
    • 2 cups self-rising flour
    • 3 slices bacon, cooked, drained, and crumbled
    • 1 cup milk

    Instructions

    1. Preheat the oven to 450°F.

    2. In a large bowl cut the shortening and flour together until the mixture resembles cornmeal. Stir in the crumbled bacon. Add the milk and stir briefly until just blended.

    3. Turn the dough out onto a floured surface and knead a few times until smooth. Roll out the dough to a 1/2-inch thickness and cut out the biscuits with a biscuit cutter. Place on a greased baking sheet and bake for 10 to 12 minutes.

      Makes about 12 biscuits.

    Final Comments

"When the harvest is yielding those fresh, red, juicy tomatoes, slather some mayonnaise on one of these hot biscuits and add a slice of peeled, chilled tomato from the garden. It's an interesting take on a BLT, and perfect for a snack or a hot day's lunch."
