    Baked Grits

    Source of Recipe

From "Come on Over!" by Elizabeth Heiskell

    List of Ingredients

    • 1 tablespoon salt
    • 2 cups grits
    • 6 ounces Cheddar cheese, grated (about 1 ½ cups)
    • 3 cloves garlic, minced or pressed
    • 8 tablespoons (1 stick) salted butter, plus more for the baking dish
    • 3 eggs, slightly beaten
    • 2 cups milk
    • 2 cups grated Parmesan cheese

    Instructions

    1. Preheat the oven to 325° F and thoroughly grease a 9 x 13-inch baking dish. Combine 2 quarts water and the salt in a large pot and bring to a boil.

    2. Add the grits and cook, stirring often, until tender but still pourable, about 12 minutes. Remove from the heat. Add the cheese, garlic, and butter and stir until the cheese and butter are melted. Let cool to room temperature.

    3. Stir the eggs and milk into the grits. Pour the mixture into the prepared baking dish. Bake for 50 to 60 minutes, until the center is set and the top is golden. Remove from the oven and sprinkle with the Parmesan.

    4. Return to the oven and bake until the cheese is melted, about 10 minutes more. Serve immediately.

    5. To make the grits ahead of time, prepare all the way through spreading the grits in the baking dish in step 3. Cover and refrigerate for up to 4 days. When you're ready to bake, pull it out of the fridge, uncover, and bake as directed.
