    Buttered Pecans

    Source of Recipe

From "Mastering the Art of Southern Cooking" by Nathalie Dupree

    Recipe Introduction

"Buttered pecan halves make a visitor feel welcome. Salt can make pecans weepy over a period of time, so store them unsalted and then salt them shortly before serving."

    List of Ingredients

    ◦ 4 cups shelled pecan halves, about 1 pound
    ◦ 1 cup salted butter, melted
    ◦ Salt

    Recipe

Preheat oven to 250 degrees. Line two rimmed baking sheets with aluminum foil or parchment paper.

Toss the pecans in a bowl with the butter. Spread pecans on the prepared baking sheets. Bake for 1 hour, stirring occasionally, until the pecans are a nice brown but not burned. Remove from the oven. If serving right away, add salt to taste. Otherwise, cool and store tightly covered.

Serve as is, or reheat briefly and add salt while hot.

    Makes 4 cups

    ❧ VariationSpicy Toasted Pecans:

Stir together 2 teaspoons paprika, 1 teaspoon onion powder, teaspoon hot red pepper, 2 teaspoons ground cumin, and 2 teaspoons granulated sugar. Sprinkle this seasoning mix over the buttered pecans before spreading out on prepared baking sheets. Bake at 300 degrees for 25 minutes.
