    Catfish Fillets

    List of Ingredients


    • 2 pounds catfish fillets
    • Salt and pepper
    • 1 cup cornmeal
    • ¼ cup all-purpose flour
    • 1 large egg
    • 1 cup vegetable oil


    Instructions


    1. Wash the catfish fillets under cold running water and pat them dry. Season with salt and pepper.

    2. In a large bowl, whisk together the cornmeal and flour.
      In a separate shallow bowl, beat the eggs well. Dip the fish in the beaten egg, then dredge it in the cornmeal to totally coat it.

    3. Heat the oil in a large, deep skillet over medium heat until a pinch of flour dropped into the oil sizzles. Lay the catfish into the oil and fry until golden brown, 5 to 6 minutes per side. Remove from the pan and serve with potato salad, coleslaw, rice, or a green salad.


      Serves 4
