    Country Cabbage with Smoked Bacon

    Recipe Introduction

    "Southerners love cabbage, especially if there's some bacon in it. This version is cooked in my favorite piece of kitchen equipment, a cast-iron skillet. Although the ingredients are simple and humble, the skillet does something magical to them, sweetening the cabbage right up."

    List of Ingredients

    â—¦ 4 bacon slices
    â—¦ ½ small head cabbage, cored, sliced thin, rinsed, and drained well
    â—¦ 1 tsp salt, or to taste
    â—¦ 2 Tbsp butter

    Recipe

    Fry the bacon in a large cast-iron skillet until crisp. Remove the slices to paper towels to drain. Don't pour off the bacon grease.

    Add the cabbage to the skillet, stir well, and cook the cabbage down, uncovered, stirring occasionally, until it's completely soft and cooked through, about 10 minutes.

    Stir in the salt and cook for another 5 minutes. Crumble in the bacon. Stir in the butter and taste. You may need to add more salt, but do it little by little and keep tasting until you've got it just right. Serve hot.


    Serves 4
