    Fresh Okra and Tomatoes

    From "My Southern Food" by Devon O'Day

    List of Ingredients


    • 1 slice bacon
    • 1 medium onion, chopped
    • 4 to 5 tomatoes, peeled and chopped
    • 4 cups sliced okra (about 1/2-inch slices)
    • 1 tsp salt
    • 1 jalapeño pepper, seeded and sliced (optional)


    Instructions


    1. Fry the bacon in the bottom of a 3-quart pot and crumble it.

    2. Sauté the onion in the bacon grease until the onion is clear. Stir in the tomatoes and continue to cook them until they are hot and bubbly. At that time, fold in the okra, salt, and jalapeño pepper if using.

    3. Cover, reduce the heat, and simmer for 20 to 30 minutes, until the okra is tender but not falling apart. Overcooking can make the okra become "ropey" or slimy.

      Makes 6 servings.
