    Ham Hock Green Beans

    Recipe Introduction

    "The ham hock is the secret to the flavor of these old-fashioned green beans."

    List of Ingredients

    â—¦ 2 pounds green beans
    â—¦ ½ cup chopped onion
    â—¦ 1 teaspoon salt
    â—¦ ½ teaspoon black pepper
    â—¦ 1 ham hock
    â—¦ 4 slices bacon, cooked and crumbled

    Recipe

    Wash and string the green beans. Cut whole beans in half crosswise. Place beans in a large saucepan or pot and fill with enough water to just barely cover the beans.

    Add onion, salt, pepper, and ham hock. Cook over medium heat until it starts to boil, and then lower heat to low and let cook, uncovered, for about 1 hour.

    Before serving, remove the ham hock and top with crumbled bacon. Save some for leftovers—these beans taste even better the second day.

    Makes 6 to 8 servings
