    Irene Cleaves's Classic Southern Fried Chicken

    Recipe Introduction

    "As an alternative to gravy, you could serve this chicken with my Memphis Sauce (see the recipe following this one)."

    List of Ingredients

    ◦ Salt and freshly ground black pepper
    ◦ Flour, for dusting
    ◦ 2 eggs, beaten
    ◦ A little milk
    ◦ One 3-pound chicken, jointed
    ◦ Oil for frying

    Gravy:
    ◦ A little flour
    ◦ Salt and freshly ground black pepper

    Recipe

    Season the flour with salt and pepper and combine the eggs and milk. Dust the chicken pieces with flour and then dip in the egg wash.

    In a large frying pan, heat the oil and fry the chicken gently to begin with, raising the temperature until it is as brown as desired and cooked through; this will take about 10 to 15 minutes. Remove from the pan and keep warm.

    To make the gravy, add a little flour to the oil in the pan and brown slowly. Add cold water, stirring, until the gravy is of the required thickness, plus salt and pepper to taste. Simmer for a few minutes, then pour over chicken.

    Serves 4
