    Low Country Gravy

    From "Tupelo Honey Cafe" by Elizabeth Sims

    List of Ingredients


    • 2 slices good bacon, chopped into small pieces
    • 4-1/2 tsp all-purpose flour
    • 2 cups heavy cream
    • 1/8 tsp cayenne pepper
    • 1 tsp minced fresh sage
    • 1/2 tsp sea salt
    • 1/4 tsp freshly ground black pepper


    Instructions


    1. In a thick-bottomed saucepan, brown the bacon on high heat, stirring occasionally, until browned.

    2. Reduce the heat to medium and add the flour, stirring constantly for 4 minutes, making a roux. Add the cream, cayenne, sage, salt, and black pepper and continue cooking over medium to low heat for 5 to 7 minutes, stirring often, until thick and creamy.

    3. Serve immediately, or store in an airtight container in the refrigerator for up to 7 days. Delicious with grits and biscuits and as an accompaniment to mashed potatoes.

      Makes approximately 2 cups.
