    Potato Salad

    From "The Southern Bite Cookbook"

    List of Ingredients


    • 1-1/2 pounds baking potatoes
    • 1 tsp salt
    • 3 large hard-boiled eggs, peeled and finely chopped
    • 1/2 small sweet onion, finely chopped
    • 2 tsp prepared mustard
    • 1/2 cup mayonnaise
    • 3 Tbsp dill pickle relish


    Instructions


    1. Wash, peel, and cut the potatoes into 3/4-inch cubes.

    2. Place the potatoes in a medium-size pot, and cover them with water. Add the salt, and heat to boiling over medium-high heat. Then reduce the heat to a simmer, and cook 15 to 20 minutes or until the potatoes are tender but not mushy. Drain the potatoes well.

    3. In a large bowl combine the chopped eggs, onion, mustard, mayonnaise, and pickle relish. Stir until well mixed. Add the drained potatoes, and toss gently to coat. Refrigerate until served.

      Serves about 4
