Sweetie Pie's Fried Green Tomatoes

Recipe Introduction
"Fried green tomatoes are one of the best things about summer in the South. They are good to eat as a snack or a side dish, and I make a spicy dip to go with them. Now, there are two ways to make fried green tomatoes. You can dredge the tomatoes in a dry cornmeal mix or you can dip them in a batter made from cornmeal. I prefer to use batter so they get very well coated. The real traditional way is to fry these in bacon grease or lard, but the healthier way is to do it in vegetable oil."

Tomatoes:
◦  2 cups all-purpose flour
◦  2 cups medium-grind cornmeal
◦  2 teaspoons sugar
◦  1 teaspoon salt, plus more for seasoning the tomatoes
◦  1 teaspoon ground black pepper, plus more for seasoning the tomatoes
◦  1¼ cups buttermilk
◦  2 large eggs, beaten
◦  2 pounds firm green tomatoes, cored and sliced crosswise ¼-inch thick
◦  1 cup vegetable oil
Dipping Sauce:
◦  ¾ cup mayonnaise
◦  1 teaspoon mustard
◦  ½ teaspoon hot sauce, or to taste
Recipe
In a large bowl, whisk together the flour, cornmeal, sugar, salt, and black pepper. Add the buttermilk and eggs and beat into a smooth batter.
Season the tomato slices with salt and pepper.
Heat the oil in a large skillet over medium heat. Dip the tomato slices in the batter, shaking off any excess. Lay the tomato slices in the oil in one layer — don't let them overlap or crowd each other.
Fry for 2 to 3 minutes, until they are lightly browned on one side, then turn them over and fry them on the other side for another 2 to 3 minutes. Repeat until all the tomatoes are fried. As the tomatoes are fried, remove them from the skillet and set them on a plate lined with paper towels or a wire rack set over a baking sheet.
Mix up the dipping sauce by whisking together the mayonnaise, mustard, and hot sauce in a small bowl. Serve the fried green tomatoes hot with the dipping sauce alongside.
