    • unsalted butter

    • buttermilk
    • cream (light or half-and-half; whipping cream)
    • crème fraîche or sour cream
    • cheese (Cheddar, Gruyère, Parmesan)

    SUGAR
    • white sugar (superfine; granulated)
    • brown sugar (light and dark)
    • raw sugar (Demerara)

    LEAVENING AGENTS
    • baking powder
    • baking soda
    • active dry yeast

    OTHER USEFUL ITEMS
    • pure vanilla extract
    • vanilla beans
    • chocolate (semisweet, milk, white)
    • unsweetened cocoa powder
    • spices (cinnamon, nutmeg, allspice, ginger)
    • nuts (almonds, pecans, hazelnuts, walnuts)
    • dried fruits (raisins, apricots, cherries, cranberries, dates, crystallized ginger)

    PASTRY
    • puff pastry: preferably all butter
