    Miscellaneous: Check Your Thermometer

    For testing meat and poultry for doneness, an instant-read thermometer is an essential kitchen tool. It's a good idea, however, to occasionally check your thermometer for accuracy. To do this, bring a pan of water to a boil. Insert the metal section of the thermometer at least 2 inches into the water. If the temperature reaches 212 degrees (F), which is the temperature of boiling water, the thermometer is accurate.

    IMPORTANT NOTE:
    This test will not work at high altitudes where water boils at a lower temperature.
