To make scrambled eggs that are soft and creamy, try cooking them slowly over the indirect heat of a double boiler. This technique works for two eggs or a dozen. They'll need the extra moisture of a little butter, plus a liquid such as milk, cream or water. It's better to use a flat whisk for stirring, as it will help aerate the eggs.
