Here is a novel way to cook a chicken or a roast without a roasting pan or V-rack. Place a round cake rack sprayed with nonstick cooking spray in a 12-inch skillet, then place a 3- to 4-pound chicken or roast on top of the rack. If the pan drippings start to burn, add a few ounces of water to the bottom of the pan.
