What's the key to making the fluffiest, lightest and most tender pancakes? Here are a few simple dos and don'ts to remember:

• DO USE BUTTERMILK
It adds flavor and makes fluffy pancakes. If you don't have buttermilk on hand, for each cup you need, add 1 tablespoon vinegar plus enough milk to make 1 cup. Let stand 5 minutes before using.
• USE A LIGHT HAND
Beating the batter until it is completely smooth produces tough pancakes. Stir the batter only until the dry ingredients are moistened. It will be lumpy.
• DO USE UP ALL THE BATTER
Place pancakes, in a single layer, on a paper towel-lined cookie sheet. Keep them warm in a 200-degree (F) oven until the last batch is cooked. Then, serve when you're ready to sit down. This way you can enjoy them while they're hot.
