    Baked Jalapeño Refried Beans

    Recipe Introduction

    "Mexican food is always a winner! These jalapeño refried beans are a delicious side to go with just about any taco, enchilada, or quesadilla that you can whip up. They also double as a spicy baked bean dip when served with warmed tortilla chips. Yum! Taste as you go, spice it up, and use fresh jalapeños if you like!"

    List of Ingredients

    â—¦ 2 (14-ounce) cans traditional refried beans
    â—¦ ¾ cup whole sour cream
    â—¦ 3 tablespoons jarred chopped jalapeños, plus 1 to 2 teaspoons jalapeño juice
    â—¦ 1 teaspoon chili powder
    â—¦ ½ teaspoon ground cumin
    â—¦ 2 cups shredded medium Cheddar cheese
    â—¦ Chopped fresh cilantro, for garnish

    Recipe

    Set the oven to 375° F.

    In a bowl, stir together the refried beans, sour cream, jalapeños and juice, chili powder, and cumin. Spread in an 8- to 10-inch cast iron skillet or casserole dish. Top with the shredded Cheddar.

    Bake for 20 to 25 minutes, or until the cheese is melted and the beans look baked and browning around the sides. Garnish with fresh cilantro.

    Serves 6 to 8
